Description

A delightful twist on classic tiramisu with fresh raspberries and creamy mascarpone.


Ingredients

  • 1 pound mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup raspberry liqueur (optional)
  • 1 package ladyfingers
  • 1 cup strong brewed coffee, cooled
  • 1 cup fresh raspberries
  • 1/4 cup raspberry jam
  • Cocoa powder, for dusting


Instructions

  1. In a large bowl, beat mascarpone cheese, heavy cream, sugar, and vanilla extract until smooth.
  2. If using, stir in raspberry liqueur.
  3. In a separate bowl, lightly dip each ladyfinger into cooled coffee.
  4. In a serving dish, arrange a layer of coffee-soaked ladyfingers.
  5. Spread half of the mascarpone mixture over the ladyfingers.
  6. Sprinkle half of the fresh raspberries and dollops of raspberry jam over the mascarpone.
  7. Repeat layers with remaining ladyfingers, mascarpone mixture, raspberries, and jam.
  8. Cover and refrigerate for at least 4 hours, or preferably overnight.
  9. Before serving, dust with cocoa powder.

Notes

  • Adjust sugar to your preference.
  • Use frozen raspberries if fresh are not available. Thaw and drain them well before using.
  • For a non-alcoholic version, omit the raspberry liqueur.
  • Store leftovers in the refrigerator for up to 3 days.
