Description
A delightful twist on classic tiramisu with fresh raspberries and creamy mascarpone.
Ingredients
- 1 pound mascarpone cheese
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 cup raspberry liqueur (optional)
- 1 package ladyfingers
- 1 cup strong brewed coffee, cooled
- 1 cup fresh raspberries
- 1/4 cup raspberry jam
- Cocoa powder, for dusting
Instructions
- In a large bowl, beat mascarpone cheese, heavy cream, sugar, and vanilla extract until smooth.
- If using, stir in raspberry liqueur.
- In a separate bowl, lightly dip each ladyfinger into cooled coffee.
- In a serving dish, arrange a layer of coffee-soaked ladyfingers.
- Spread half of the mascarpone mixture over the ladyfingers.
- Sprinkle half of the fresh raspberries and dollops of raspberry jam over the mascarpone.
- Repeat layers with remaining ladyfingers, mascarpone mixture, raspberries, and jam.
- Cover and refrigerate for at least 4 hours, or preferably overnight.
- Before serving, dust with cocoa powder.
Notes
- Adjust sugar to your preference.
- Use frozen raspberries if fresh are not available. Thaw and drain them well before using.
- For a non-alcoholic version, omit the raspberry liqueur.
- Store leftovers in the refrigerator for up to 3 days.
