Description

These Raspberry Lemon Bars are a delightful combination of tart lemon and sweet raspberries. They are easy to make and perfect for any occasion.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 3/4 cup cold unsalted butter, cut into cubes
  • 1 3/4 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/2 cup lemon juice
  • 2 tablespoons lemon zest
  • 1 cup fresh raspberries


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine 1 1/2 cups flour and powdered sugar. Cut in cold butter until mixture resembles coarse crumbs.
  3. Press mixture into the bottom of an ungreased 9×13 inch baking pan.
  4. Bake for 15-20 minutes, or until lightly golden.
  5. In another bowl, whisk together granulated sugar, 1/4 cup flour, baking powder, and salt.
  6. Add eggs, lemon juice, and lemon zest. Mix well.
  7. Gently fold in fresh raspberries.
  8. Pour mixture over the pre-baked crust.
  9. Bake for 20-25 minutes, or until the filling is set.
  10. Let cool completely before cutting into bars.

Notes

  • For a tangier flavor, increase the amount of lemon juice.
  • Use parchment paper to line the baking pan for easy removal.
  • Dust with powdered sugar before serving, if desired.
