These Raspberry Lemon Bars are a delightful combination of tart lemon and sweet raspberries. They are easy to make and perfect for any occasion.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 3/4 cup cold unsalted butter, cut into cubes
- 1 3/4 cups granulated sugar
- 1/4 cup all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 3 large eggs
- 1/2 cup lemon juice
- 2 tablespoons lemon zest
- 1 cup fresh raspberries
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, combine 1 1/2 cups flour and powdered sugar. Cut in cold butter until mixture resembles coarse crumbs.
- Press mixture into the bottom of an ungreased 9×13 inch baking pan.
- Bake for 15-20 minutes, or until lightly golden.
- In another bowl, whisk together granulated sugar, 1/4 cup flour, baking powder, and salt.
- Add eggs, lemon juice, and lemon zest. Mix well.
- Gently fold in fresh raspberries.
- Pour mixture over the pre-baked crust.
- Bake for 20-25 minutes, or until the filling is set.
- Let cool completely before cutting into bars.
Notes
- For a tangier flavor, increase the amount of lemon juice.
- Use parchment paper to line the baking pan for easy removal.
- Dust with powdered sugar before serving, if desired.
