Description

A quick and easy ground beef and rice skillet dinner that is both cheap and filling. Perfect for busy weeknights and families on a budget.


Ingredients

  • 1 pound ground beef
  • 1 cup white rice
  • 2 cups beef broth
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: Shredded cheese for topping


Instructions

  1. Brown ground beef in a large skillet over medium-high heat. Drain off any excess grease.
  2. Add chopped onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  3. Stir in rice, beef broth, diced tomatoes, garlic powder, onion powder, salt, and pepper.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked and liquid is absorbed.
  5. Fluff with a fork and serve. Top with shredded cheese, if desired.

Notes

  • You can use brown rice instead of white rice, but it will take longer to cook.
  • Feel free to add other vegetables, such as corn, peas, or carrots.
  • For a spicier dish, add a pinch of red pepper flakes.
