Description
A quick and easy ground beef and rice skillet dinner that is both cheap and filling. Perfect for busy weeknights and families on a budget.
Ingredients
- 1 pound ground beef
- 1 cup white rice
- 2 cups beef broth
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Optional: Shredded cheese for topping
Instructions
- Brown ground beef in a large skillet over medium-high heat. Drain off any excess grease.
- Add chopped onion and bell pepper to the skillet and cook until softened, about 5 minutes.
- Stir in rice, beef broth, diced tomatoes, garlic powder, onion powder, salt, and pepper.
- Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked and liquid is absorbed.
- Fluff with a fork and serve. Top with shredded cheese, if desired.
Notes
- You can use brown rice instead of white rice, but it will take longer to cook.
- Feel free to add other vegetables, such as corn, peas, or carrots.
- For a spicier dish, add a pinch of red pepper flakes.
