  • 6 large eggs

  • 1 tablespoon olive oil
  • 1 cup chopped mixed vegetables (e.g., onions, bell peppers, mushrooms)
  • 1/2 cup frozen spinach, thawed and squeezed dry
  • 1/2 cup shredded cheese (e.g., cheddar, mozzarella)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together eggs, milk, salt, and pepper.
  3. Heat olive oil in an oven-safe skillet over medium heat.
  4. Add chopped vegetables and cook until softened, about 5-7 minutes.
  5. Stir in the thawed and squeezed spinach. Cook for another 2 minutes.
  6. Pour the egg mixture evenly over the vegetables in the skillet.
