Ingredients
- 4 oz Chicken Breast, cooked and diced
- 1 cup Mixed Vegetables (broccoli, carrots, bell peppers)
- 1/2 cup Cooked Quinoa
- 1 tbsp Olive Oil
- 1 tbsp Lemon Juice
- Salt and Pepper to taste
Instructions
- Cook quinoa according to package directions.
- Steam or roast mixed vegetables until tender.
- In a bowl, combine cooked quinoa, vegetables, and chicken.
- Drizzle with olive oil and lemon juice.
- Season with salt and pepper.
- Serve immediately.
