Ingredients
- 1 lb Chicken Breast, cubed
- 1 tbsp Olive Oil
- 1 cup Pineapple, diced
- 1/2 cup Red Onion, diced
- 1/4 cup Cilantro, chopped
- 1 Lime, juiced
- 1 tsp Chili Powder
- 1/2 tsp Cumin
- Salt and Pepper to taste
- 8 Corn Tortillas
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned and cooked through.
- Stir in pineapple, red onion, cilantro, lime juice, chili powder, cumin, salt, and pepper.
- Cook for 5 minutes, or until heated through.
- Warm tortillas.
- Fill each tortilla with chicken mixture.
- Serve immediately.

- Add a dollop of Greek yogurt or sour cream for extra flavor.
- For a spicier taco, add a pinch of cayenne pepper.
