Description
A hearty and healthy vegetable soup perfect for a simple dinner.
Ingredients
- 1 tbsp olive oil
- 1 cup chopped onion
- 2 cloves garlic, minced
- 4 cups chopped carrots
- 3 cups chopped celery
- 4 cups chopped potatoes
- 8 cups vegetable broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 1 cup chopped broccoli florets
- 1 cup chopped kale
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in carrots, celery, and potatoes.
- Pour in vegetable broth and add thyme and rosemary.
- Bring to a boil, then reduce heat and simmer, covered, for 20-25 minutes, or until vegetables are tender.
- Add broccoli and kale and cook for another 5-7 minutes, until tender.
- Season with salt and pepper to taste.
Notes
This soup can be made ahead and reheated. It also freezes well.
