Description

A hearty and healthy vegetable soup perfect for a simple dinner.


Ingredients

  • 1 tbsp olive oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups chopped carrots
  • 3 cups chopped celery
  • 4 cups chopped potatoes
  • 8 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 1 cup chopped broccoli florets
  • 1 cup chopped kale


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Stir in carrots, celery, and potatoes.
  5. Pour in vegetable broth and add thyme and rosemary.
  6. Bring to a boil, then reduce heat and simmer, covered, for 20-25 minutes, or until vegetables are tender.
  7. Add broccoli and kale and cook for another 5-7 minutes, until tender.
  8. Season with salt and pepper to taste.

Notes

This soup can be made ahead and reheated. It also freezes well.
