Peruvian Chicken and Rice with Green Sauce is a flavorful and complete meal.


Ingredients

  • 1 whole chicken
  • 1 cup soy sauce
  • 1/2 cup red wine vinegar
  • 1/4 cup olive oil
  • 2 tablespoons minced garlic
  • 1 tablespoon ground cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon black pepper
  • 2 cups rice
  • 4 cups chicken broth
  • 1/2 cup chopped cilantro
  • 1/4 cup mayonnaise
  • 2 cloves garlic
  • 1 jalapeño, seeded
  • 1/4 cup vegetable oil
  • Salt to taste


Instructions

  1. Marinate chicken in soy sauce, red wine vinegar, olive oil, garlic, cumin, paprika, and pepper for at least 2 hours.
  2. Cook rice in chicken broth until tender.
  3. Prepare green sauce by blending cilantro, mayonnaise, garlic, jalapeño, vegetable oil, and salt.
  4. Grill or bake chicken until cooked through.
  5. Serve chicken over rice with green sauce.
