Ingredients
- 1 whole chicken
- 1 cup soy sauce
- 1/2 cup red wine vinegar
- 1/4 cup olive oil
- 2 tablespoons minced garlic
- 1 tablespoon ground cumin
- 1 tablespoon smoked paprika
- 1 teaspoon black pepper
- 2 cups rice
- 4 cups chicken broth
- 1/2 cup chopped cilantro
- 1/4 cup mayonnaise
- 2 cloves garlic
- 1 jalapeño, seeded
- 1/4 cup vegetable oil
- Salt to taste
Instructions
- Marinate chicken in soy sauce, red wine vinegar, olive oil, garlic, cumin, paprika, and pepper for at least 2 hours.
- Cook rice in chicken broth until tender.
- Prepare green sauce by blending cilantro, mayonnaise, garlic, jalapeño, vegetable oil, and salt.
- Grill or bake chicken until cooked through.
- Serve chicken over rice with green sauce.
