Ingredients

  • 1 pound pasta
  • 1.5 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons Peri Peri seasoning
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish


Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. Season chicken with Peri Peri seasoning.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through.
  4. Remove chicken from skillet and set aside.
  5. Add onion and bell pepper to the skillet and cook until softened. Add garlic and cook for 1 minute more.
  6. Stir in diced tomatoes and chicken broth. Bring to a simmer and cook for 5 minutes.
  7. Stir in heavy cream, salt, and pepper.
  8. Add cooked pasta and chicken to the skillet. Toss to combine.
  9. Garnish with fresh parsley and serve.

Notes

  • Adjust Peri Peri seasoning to your preferred level of spice.
  • Use chicken breast instead of thighs, if you prefer.
  • Add other vegetables, such as zucchini or mushrooms.
