Ingredients
- 1 pound pasta
- 1.5 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tablespoons Peri Peri seasoning
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Cook pasta according to package directions. Drain and set aside.
- Season chicken with Peri Peri seasoning.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through.
- Remove chicken from skillet and set aside.
- Add onion and bell pepper to the skillet and cook until softened. Add garlic and cook for 1 minute more.
- Stir in diced tomatoes and chicken broth. Bring to a simmer and cook for 5 minutes.
- Stir in heavy cream, salt, and pepper.
- Add cooked pasta and chicken to the skillet. Toss to combine.
- Garnish with fresh parsley and serve.
Notes
- Adjust Peri Peri seasoning to your preferred level of spice.
- Use chicken breast instead of thighs, if you prefer.
- Add other vegetables, such as zucchini or mushrooms.
- For a spicier dish, add a pinch of red pepper flakes.
