Description

Pasta Primavera is a light and flavorful dish perfect for spring and summer. It features fresh seasonal vegetables tossed with pasta in a simple sauce.


Ingredients

  • 1 pound pasta
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 cup asparagus, cut into 1-inch pieces
  • 1 cup broccoli florets
  • 1 cup peas
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste


Instructions

  1. Cook pasta according to package directions.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add garlic and cook for 1 minute.
  4. Add asparagus, broccoli, and peas to the skillet and cook for 5 minutes, or until tender-crisp.
  5. Add cherry tomatoes and cook for 2 minutes.
  6. Drain pasta and add it to the skillet with the vegetables.
  7. Toss with Parmesan cheese, salt, and pepper.
  8. Serve immediately.

Notes

  • You can use any seasonal vegetables you like.
  • Add a pinch of red pepper flakes for a little heat.
  • Use vegetable broth to make it lighter.
