Description
Pasta Primavera is a light and flavorful dish perfect for spring and summer. It features fresh seasonal vegetables tossed with pasta in a simple sauce.
Ingredients
- 1 pound pasta
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1 cup asparagus, cut into 1-inch pieces
- 1 cup broccoli florets
- 1 cup peas
- 1/2 cup cherry tomatoes, halved
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions.
- While pasta cooks, heat olive oil in a large skillet over medium heat.
- Add garlic and cook for 1 minute.
- Add asparagus, broccoli, and peas to the skillet and cook for 5 minutes, or until tender-crisp.
- Add cherry tomatoes and cook for 2 minutes.
- Drain pasta and add it to the skillet with the vegetables.
- Toss with Parmesan cheese, salt, and pepper.
- Serve immediately.
Notes
- You can use any seasonal vegetables you like.
- Add a pinch of red pepper flakes for a little heat.
- Use vegetable broth to make it lighter.
