Description

A quick and healthy one-pot meal featuring ground turkey, quinoa, and taco seasonings. This skillet dish is perfect for busy weeknights.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup quinoa, rinsed
  • 2 cups chicken broth
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes with green chilies, undrained
  • 1/2 cup frozen corn
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, avocado, cilantro


Instructions

  1. Heat olive oil in a large skillet or pot over medium-high heat.
  2. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  3. Add chopped onion and cook until softened, about 5 minutes.
  4. Stir in minced garlic, chili powder, cumin, smoked paprika, and cayenne pepper (if using). Cook for 1 minute until fragrant.
  5. Add rinsed quinoa, chicken broth, black beans, diced tomatoes with green chilies, and frozen corn. Stir to combine.
  6. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is cooked and liquid is absorbed.
  7. Season with salt and pepper to taste.
  8. Serve hot, topped with your favorite taco fixings.

Notes

  • For a spicier dish, add more cayenne pepper or a pinch of red pepper flakes.
  • If you don’t have chicken broth, vegetable broth can be used.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
