Description
A quick and healthy one-pot meal featuring ground turkey, quinoa, and taco seasonings. This skillet dish is perfect for busy weeknights.
Ingredients
- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 cup quinoa, rinsed
- 2 cups chicken broth
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (10 ounce) can diced tomatoes with green chilies, undrained
- 1/2 cup frozen corn
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, avocado, cilantro
Instructions
- Heat olive oil in a large skillet or pot over medium-high heat.
- Add ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
- Add chopped onion and cook until softened, about 5 minutes.
- Stir in minced garlic, chili powder, cumin, smoked paprika, and cayenne pepper (if using). Cook for 1 minute until fragrant.
- Add rinsed quinoa, chicken broth, black beans, diced tomatoes with green chilies, and frozen corn. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is cooked and liquid is absorbed.
- Season with salt and pepper to taste.
- Serve hot, topped with your favorite taco fixings.
Notes
- For a spicier dish, add more cayenne pepper or a pinch of red pepper flakes.
- If you don’t have chicken broth, vegetable broth can be used.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
