Description

A quick and easy one-pot turkey bolognese sauce served over rigatoni. This dish is perfect for a cozy, family-friendly weeknight meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound lean ground turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound rigatoni pasta
  • 4 cups chicken broth
  • 1/4 cup grated Parmesan cheese, for serving (optional)


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain off any excess fat.
  2. Add chopped onion to the pot and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
  3. Stir in crushed tomatoes, oregano, basil, salt, and pepper. Bring to a simmer.
  4. Add rigatoni pasta and chicken broth to the pot. Stir to combine, ensuring the pasta is submerged in the liquid.
  5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the pasta is cooked al dente and the sauce has thickened. Stir occasionally to prevent sticking.
  6. Serve hot, topped with grated Parmesan cheese if desired.

Notes

  • For a spicier sauce, add a pinch of red pepper flakes with the other seasonings.
  • You can substitute other pasta shapes like penne or farfalle.
