Description
Quick and easy one-pot tomato basil orzo pasta.
Ingredients
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 cup orzo pasta
- 2 cups vegetable broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh basil, chopped
- Grated Parmesan cheese, for serving (optional)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Stir in crushed tomatoes, orzo pasta, vegetable broth, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until orzo is cooked through and liquid is absorbed, stirring occasionally.
- Stir in fresh basil.
- Serve immediately, topped with grated Parmesan cheese, if desired.
Notes
- Add a pinch of red pepper flakes for a little heat.
- Substitute chicken broth for vegetable broth.
- For a richer flavor, use roasted tomatoes.
