Description

Quick and easy one-pot tomato basil orzo pasta.


Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh basil, chopped
  • Grated Parmesan cheese, for serving (optional)


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  3. Stir in crushed tomatoes, orzo pasta, vegetable broth, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until orzo is cooked through and liquid is absorbed, stirring occasionally.
  5. Stir in fresh basil.
  6. Serve immediately, topped with grated Parmesan cheese, if desired.

Notes

  • Add a pinch of red pepper flakes for a little heat.
  • Substitute chicken broth for vegetable broth.
  • For a richer flavor, use roasted tomatoes.
