Description
This One-Pot Sausage & Spinach Gnocchi is a quick, easy, and delicious meal perfect for busy weeknights. You can make it all in one pot for minimal cleanup.
Ingredients
- 1 pound Italian sausage, removed from casings
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15-ounce) can diced tomatoes, undrained
- 1 (15-ounce) can cannellini beans, rinsed and drained
- 1 cup chicken broth
- 1 (16-ounce) package gnocchi
- 5 ounces fresh spinach
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- In a large pot or Dutch oven, brown the Italian sausage over medium-high heat. Break it up with a spoon as it cooks.
- Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more.
- Pour in the diced tomatoes, cannellini beans, and chicken broth. Bring to a simmer.
- Stir in the gnocchi and cook according to package directions, usually about 5-7 minutes, or until the gnocchi are tender.
- Stir in the spinach and cook until wilted, about 1-2 minutes.
- Stir in the heavy cream and Parmesan cheese. Season with salt and pepper to taste.
- Serve immediately.
Notes
- You can use any type of sausage you like.
- For a spicier dish, add a pinch of red pepper flakes.
- If you don’t have cannellini beans, you can use another type of bean.
- You can substitute kale for the spinach.
