Description

This One-Pot Sausage & Spinach Gnocchi is a quick, easy, and delicious meal perfect for busy weeknights. You can make it all in one pot for minimal cleanup.


Ingredients

  • 1 pound Italian sausage, removed from casings
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15-ounce) can diced tomatoes, undrained
  • 1 (15-ounce) can cannellini beans, rinsed and drained
  • 1 cup chicken broth
  • 1 (16-ounce) package gnocchi
  • 5 ounces fresh spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste


Instructions

  1. In a large pot or Dutch oven, brown the Italian sausage over medium-high heat. Break it up with a spoon as it cooks.
  2. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more.
  3. Pour in the diced tomatoes, cannellini beans, and chicken broth. Bring to a simmer.
  4. Stir in the gnocchi and cook according to package directions, usually about 5-7 minutes, or until the gnocchi are tender.
  5. Stir in the spinach and cook until wilted, about 1-2 minutes.
  6. Stir in the heavy cream and Parmesan cheese. Season with salt and pepper to taste.
  7. Serve immediately.

Notes

  • You can use any type of sausage you like.
  • For a spicier dish, add a pinch of red pepper flakes.
  • If you don’t have cannellini beans, you can use another type of bean.
  • You can substitute kale for the spinach.
