Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup uncooked white rice
  • 1 (16 ounce) jar salsa verde
  • 1 cup chicken broth
  • 1/2 cup chopped fresh cilantro


Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
  2. Add chicken, salt, and pepper. Cook until browned on all sides, about 5-7 minutes.
  3. Stir in uncooked rice, salsa verde, and chicken broth.
