A simple and flavorful one-pot pasta dish featuring tuna, lemon, and garlic. It’s a quick and easy meal perfect for busy weeknights.

Ingredients

  • 8 ounces pasta
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 (5 ounce) can tuna, drained
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup lemon juice
  • 2 cups water
  • 1/4 cup chopped fresh parsley

Instructions

  1. Combine pasta, olive oil, garlic, tuna, salt, pepper, lemon juice, and water in a large pot or Dutch oven.
  2. Bring to a boil over medium-high heat.
  3. Reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until pasta is cooked through and liquid is mostly absorbed, stirring occasionally.
  4. Stir in fresh parsley before serving.

Notes

  • For a creamier sauce, stir in 2 tablespoons of butter or a splash of heavy cream at the end.
  • Add a pinch of red pepper flakes for a touch of heat.
