Ingredients
- 1 pound pasta
- 1 head broccoli, cut into florets
- 1 lemon, zested and juiced
- 4 cups chicken or vegetable broth
- 1/2 cup grated Parmesan cheese, plus more for serving
- 2 tablespoons olive oil
- Salt and black pepper to taste
Instructions
- In a large pot or Dutch oven, combine pasta, broccoli florets, lemon zest, lemon juice, broth, olive oil, salt, and pepper.
- Bring to a boil over medium-high heat.
- Stir occasionally, cooking until pasta is al dente and most of the liquid has been absorbed, about 10-12 minutes.
- Stir in the Parmesan cheese until melted and combined.
- Serve immediately, garnished with extra Parmesan cheese if desired.
Notes
- You can add cooked chicken or shrimp for extra protein.
- Adjust lemon juice to your preference.
- If the pasta is not fully cooked and the liquid is gone, add a little more broth or water.
