Description

A simple and delicious one-pot pasta dish featuring bright lemon, tender broccoli, and savory Parmesan cheese. Perfect for a quick weeknight meal.


Ingredients

  • 1 pound pasta
  • 1 head broccoli, cut into florets
  • 1 lemon, zested and juiced
  • 4 cups chicken or vegetable broth
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 2 tablespoons olive oil
  • Salt and black pepper to taste


Instructions

  1. In a large pot or Dutch oven, combine pasta, broccoli florets, lemon zest, lemon juice, broth, olive oil, salt, and pepper.
  2. Bring to a boil over medium-high heat.
  3. Stir occasionally, cooking until pasta is al dente and most of the liquid has been absorbed, about 10-12 minutes.
  4. Stir in the Parmesan cheese until melted and combined.
  5. Serve immediately, garnished with extra Parmesan cheese if desired.

Notes

  • You can add cooked chicken or shrimp for extra protein.
  • Adjust lemon juice to your preference.
