Ingredients
- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts, cubed
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup frozen peas
- 1 cup frozen corn
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 lb gnocchi
- 1/2 cup heavy cream
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add chicken and cook until browned.
- Add onion, carrots, and celery and cook until softened, about 5 minutes.
- Add garlic, chicken broth, peas, corn, thyme, salt, and pepper. Bring to a boil.
- Stir in gnocchi and reduce heat to simmer. Cook until gnocchi is tender, about 5-7 minutes.
- Stir in heavy cream and heat through.
- Serve immediately.
Notes
- Add other vegetables, such as potatoes or green beans.
- Use pre-cooked rotisserie chicken for a faster meal.
- Top with puff pastry for a traditional pot pie crust, if desired.
