Description

Ingredients

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, cubed
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lb gnocchi
  • 1/2 cup heavy cream


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chicken and cook until browned.
  3. Add onion, carrots, and celery and cook until softened, about 5 minutes.
  4. Add garlic, chicken broth, peas, corn, thyme, salt, and pepper. Bring to a boil.
  5. Stir in gnocchi and reduce heat to simmer. Cook until gnocchi is tender, about 5-7 minutes.
  6. Stir in heavy cream and heat through.
  7. Serve immediately.
