Ingredients

- 1 (28 ounce) can crushed tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cloves garlic, minced
- 5 ounces fresh spinach
- 1/4 cup nutritional yeast (for creamy flavor)
- 2 tablespoons olive oil
Instructions
- Combine pasta, crushed tomatoes, vegetable broth, oregano, salt, pepper, and garlic in a large pot.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until pasta is cooked and liquid is absorbed, stirring occasionally.
