Description

A quick and easy one-pot pasta dish featuring creamy lemon sauce and tender spinach tortellini. Perfect for a weeknight meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 (19 ounce) package refrigerated cheese tortellini
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 5 ounces fresh spinach


Instructions

  1. Heat olive oil in a large skillet or pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
  2. Stir in the refrigerated tortellini and vegetable broth. Bring to a boil, then reduce heat and simmer for 5-7 minutes, or until tortellini is tender.
  3. Stir in the heavy cream, Parmesan cheese, lemon juice, salt, and pepper.
  4. Add the fresh spinach and stir until wilted, about 2-3 minutes.
  5. Serve immediately.

Notes

  • For a richer sauce, you can add more Parmesan cheese.
