Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 4 cups chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add chicken and cook until browned and cooked through. Season with salt and pepper. Remove chicken from the pot and set aside.
- Add onion and garlic to the pot and cook until softened, about 5 minutes.
- Stir in orzo pasta and cook for 1 minute, stirring constantly.
- Pour in chicken broth and bring to a boil. Reduce heat and simmer for 10-12 minutes, or until orzo is cooked through and liquid is absorbed.
- Stir in heavy cream and Parmesan cheese until well combined.
- Add chicken back to the pot and heat through.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
Notes
- You can add vegetables like spinach, mushrooms, or sun-dried tomatoes.
- For a spicier dish, add a pinch of red pepper flakes.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
