Description

Enjoy a comforting and easy one-pot creamy chicken orzo. It is a simple dish perfect for a weeknight dinner.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley, for garnish


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chicken and cook until browned and cooked through. Season with salt and pepper. Remove chicken from the pot and set aside.
  3. Add onion and garlic to the pot and cook until softened, about 5 minutes.
  4. Stir in orzo pasta and cook for 1 minute, stirring constantly.
  5. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 10-12 minutes, or until orzo is cooked through and liquid is absorbed.
  6. Stir in heavy cream and Parmesan cheese until well combined.
  7. Add chicken back to the pot and heat through.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh parsley before serving.

  • You can add vegetables like spinach, mushrooms, or sun-dried tomatoes.
