Ingredients
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 pound store-bought potato gnocchi
- 2 cups broccoli florets
- 1.5 cups vegetable broth
- 0.5 cup heavy cream
- 1 cup shredded cheddar cheese
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in the gnocchi and broccoli florets.
- Pour in the vegetable broth and bring to a simmer. Cook for 5-7 minutes, or until gnocchi are tender and broccoli is bright green.
- Reduce heat to low. Stir in the heavy cream and cheddar cheese until the cheese is melted and the sauce is creamy.
- Season with salt and pepper to taste. Serve immediately.
Notes
- For a thinner sauce, add a little more vegetable broth or cream.
