Description

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound store-bought potato gnocchi
  • 2 cups broccoli florets
  • 1.5 cups vegetable broth
  • 0.5 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and black pepper to taste


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Stir in the gnocchi and broccoli florets.
  4. Pour in the vegetable broth and bring to a simmer. Cook for 5-7 minutes, or until gnocchi are tender and broccoli is bright green.
  5. Reduce heat to low. Stir in the heavy cream and cheddar cheese until the cheese is melted and the sauce is creamy.
