Description

Enjoy a comforting one-pot chicken pot pie gnocchi. It is a quick and easy meal.


Ingredients

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lb gnocchi
  • 1 cup frozen peas
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh parsley


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chicken and cook until browned.
  3. Add onion, carrots, and celery. Cook until softened.
  4. Add garlic, thyme, salt, and pepper. Cook for 1 minute.
  5. Pour in chicken broth and bring to a boil.
  6. Add gnocchi and cook according to package directions.
  7. Stir in frozen peas and heavy cream. Heat.
  8. Garnish with fresh parsley and serve.

Notes

  • You can use different vegetables.
  • Add a splash of lemon juice for brightness.
