Description

A simple and delicious one-pot pasta dish featuring chicken, marinara sauce, melted mozzarella, and a crispy breadcrumb topping.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups chicken broth
  • 1 (24 ounce) jar marinara sauce
  • 12 ounces dry pasta (such as penne or rotini)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup Italian-style breadcrumbs
  • 2 tablespoons grated Parmesan cheese


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat.
  3. Add chicken pieces and season with Italian seasoning, garlic powder, salt, and pepper. Cook until lightly browned, about 5-7 minutes.
  4. Pour in chicken broth and marinara sauce. Bring to a simmer.
  5. Stir in dry pasta. Ensure pasta is mostly submerged in the liquid.
  6. Cover the pot and transfer to the preheated oven. Bake for 20-25 minutes, or until pasta is al dente and liquid has mostly been absorbed.
  7. Remove from oven. Sprinkle mozzarella cheese, breadcrumbs, and Parmesan cheese over the top.
  8. Return to the oven, uncovered, and bake for another 5-10 minutes, or until cheese is melted and bubbly and breadcrumbs are golden brown.
  9. Let stand for a few minutes before serving.

Notes

  • For extra flavor, you can add a pinch of red pepper flakes to the sauce.
  • Garnish with fresh basil or parsley before serving if desired.
