Description
A simple and delicious one-pot pasta dish featuring chicken, marinara sauce, melted mozzarella, and a crispy breadcrumb topping.
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups chicken broth
- 1 (24 ounce) jar marinara sauce
- 12 ounces dry pasta (such as penne or rotini)
- 1 cup shredded mozzarella cheese
- 1/4 cup Italian-style breadcrumbs
- 2 tablespoons grated Parmesan cheese
Instructions
- Preheat oven to 375°F (190°C).
- In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat.
- Add chicken pieces and season with Italian seasoning, garlic powder, salt, and pepper. Cook until lightly browned, about 5-7 minutes.
- Pour in chicken broth and marinara sauce. Bring to a simmer.
- Stir in dry pasta. Ensure pasta is mostly submerged in the liquid.
- Cover the pot and transfer to the preheated oven. Bake for 20-25 minutes, or until pasta is al dente and liquid has mostly been absorbed.
- Remove from oven. Sprinkle mozzarella cheese, breadcrumbs, and Parmesan cheese over the top.
- Return to the oven, uncovered, and bake for another 5-10 minutes, or until cheese is melted and bubbly and breadcrumbs are golden brown.
- Let stand for a few minutes before serving.
Notes
- For extra flavor, you can add a pinch of red pepper flakes to the sauce.
- Garnish with fresh basil or parsley before serving if desired.
- Ensure your pot is oven-safe before proceeding.
