Description

A simple and flavorful one-pan meal featuring tender chicken coated in a sweet and smoky honey BBQ sauce, served over fluffy rice.


Ingredients

  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: chopped fresh parsley for garnish


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe skillet or baking dish, combine the uncooked rice and chicken broth.
  3. In a small bowl, whisk together the BBQ sauce, honey, soy sauce, Worcestershire sauce, garlic powder, and onion powder.
  4. Add the chicken pieces to the skillet with the rice and broth. Season with salt and pepper.
  5. Pour the BBQ sauce mixture evenly over the chicken and rice. Stir gently to combine.
  6. Cover the skillet tightly with foil.
  7. Bake for 30 minutes.
  8. Remove the foil and bake for another 10-15 minutes, or until the chicken is cooked through and the rice is tender and has absorbed most of the liquid.
  9. Let stand for 5 minutes before serving. Garnish with fresh parsley if desired.

Notes

  • You can substitute chicken breast for chicken thighs, but adjust cooking time as needed to prevent drying out.
