A simple and flavorful one-pan meal featuring tender chicken coated in a sweet and smoky honey BBQ sauce, served over fluffy rice.
Ingredients
- 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 cup uncooked white rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Optional: chopped fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large oven-safe skillet or baking dish, combine the uncooked rice and chicken broth.
- In a small bowl, whisk together the BBQ sauce, honey, soy sauce, Worcestershire sauce, garlic powder, and onion powder.
- Add the chicken pieces to the skillet with the rice and broth. Season with salt and pepper.
- Pour the BBQ sauce mixture evenly over the chicken and rice. Stir gently to combine.
- Cover the skillet tightly with foil.
- Bake for 30 minutes.
- Remove the foil and bake for another 10-15 minutes, or until the chicken is cooked through and the rice is tender and has absorbed most of the liquid.
- Let stand for 5 minutes before serving. Garnish with fresh parsley if desired.
Notes
- You can substitute chicken breast for chicken thighs, but adjust cooking time as needed to prevent drying out.
- Feel free to add vegetables like chopped bell peppers or onions to the dish before baking.
