Description

This One-Pan Ground Beef & Veggie Skillet is a quick, easy, and healthy meal. Perfect for busy weeknights.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 yellow squash, chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground beef and cook, breaking it apart with a spoon, until browned. Drain excess grease.
  3. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  4. Add bell pepper, zucchini, and yellow squash to the skillet and cook until slightly tender, about 5-7 minutes.
  5. Stir in diced tomatoes, oregano, salt, and pepper.
  6. Bring to a simmer and cook for 5 minutes, or until heated through.
  7. Serve immediately.
