This One-Pan Ground Beef & Veggie Skillet is a quick, easy, and healthy meal. Perfect for busy weeknights.
Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 zucchini, chopped
- 1 yellow squash, chopped
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground beef and cook, breaking it apart with a spoon, until browned. Drain excess grease.
- Add onion and garlic to the skillet and cook until softened, about 5 minutes.
- Add bell pepper, zucchini, and yellow squash to the skillet and cook until slightly tender, about 5-7 minutes.
- Stir in diced tomatoes, oregano, salt, and pepper.
- Bring to a simmer and cook for 5 minutes, or until heated through.
- Serve immediately.
Notes
- Add other vegetables, like mushrooms or spinach.
- Serve over rice or quinoa.
- Top with cheese or avocado.
