Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, oil-packed, drained
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 5 oz fresh spinach


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken breasts with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat.
  4. Sear chicken breasts for 3-4 minutes per side, until golden brown.
  5. Remove chicken from skillet and set aside.
  6. Add garlic and sun-dried tomatoes to the skillet and cook for 1 minute.
  7. Stir in heavy cream, chicken broth, and Parmesan cheese. Bring to a simmer.
  8. Add spinach and cook until wilted.
  9. Return chicken to the skillet.
  10. Transfer skillet to the oven and bake for 15-20 minutes, or until chicken is cooked through.
  11. Serve immediately.

Notes

  • For extra flavor, add a pinch of red pepper flakes.
  • Serve with pasta, rice, or crusty bread.
  • You can substitute kale for spinach.
