Ingredients
- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, oil-packed, drained
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 5 oz fresh spinach
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken breasts with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear chicken breasts for 3-4 minutes per side, until golden brown.
- Remove chicken from skillet and set aside.
- Add garlic and sun-dried tomatoes to the skillet and cook for 1 minute.
- Stir in heavy cream, chicken broth, and Parmesan cheese. Bring to a simmer.
- Add spinach and cook until wilted.
- Return chicken to the skillet.
- Transfer skillet to the oven and bake for 15-20 minutes, or until chicken is cooked through.
- Serve immediately.
Notes
- For extra flavor, add a pinch of red pepper flakes.
- Serve with pasta, rice, or crusty bread.
- You can substitute kale for spinach.
