Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 tbsp olive oil
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 cup long-grain rice, rinsed
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Heat olive oil in a large oven-safe skillet over medium-high heat. Season chicken with salt and pepper and cook until browned on all sides. Remove chicken from skillet and set aside.
- Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Stir in rice and cook for 1 minute, stirring constantly.
- Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes, or until rice is tender and liquid is absorbed.
- Stir in heavy cream and Parmesan cheese. Return chicken to the skillet and heat through.
- Garnish with fresh parsley and serve immediately.
Notes
- For a spicier dish, add a pinch of red pepper flakes.
- You can substitute chicken breasts for chicken thighs, but reduce the cooking time accordingly.
