Description

Enjoy a comforting and easy One-Pan Creamy Chicken & Rice, ready in just 30 minutes. This dish is perfect for a quick and satisfying winter meal.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain rice, rinsed
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large oven-safe skillet over medium-high heat. Season chicken with salt and pepper and cook until browned on all sides. Remove chicken from skillet and set aside.
  2. Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  3. Stir in rice and cook for 1 minute, stirring constantly.
  4. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes, or until rice is tender and liquid is absorbed.
  5. Stir in heavy cream and Parmesan cheese. Return chicken to the skillet and heat through.
  6. Garnish with fresh parsley and serve immediately.

Notes

  • For a spicier dish, add a pinch of red pepper flakes.
  • You can substitute chicken breasts for chicken thighs, but reduce the cooking time accordingly.
