A simple and satisfying one-pan meal featuring tender chicken and buttery noodles, perfect for a weeknight dinner.
Ingredients
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 2 cups chicken broth
- 8 ounces egg noodles
- 1/4 cup butter
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Add chicken pieces, salt, pepper, garlic powder, and onion powder. Cook until browned on all sides, about 5-7 minutes.
- Pour in chicken broth and bring to a boil.
- Stir in egg noodles, butter, and Parmesan cheese.
- Reduce heat to low, cover, and simmer for 10-12 minutes, or until noodles are tender and most of the liquid has been absorbed, stirring occasionally.
- Stir in fresh parsley before serving.
Notes
- For a richer flavor, use chicken thighs instead of breasts.
- If you prefer a saucier dish, add an extra 1/2 cup of chicken broth.
- Add a handful of frozen peas or spinach in the last 5 minutes of cooking for extra vegetables.
