Description

A simple and satisfying one-pan meal featuring tender chicken and buttery noodles, perfect for a weeknight dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 2 cups chicken broth
  • 8 ounces egg noodles
  • 1/4 cup butter
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
  2. Add chicken pieces, salt, pepper, garlic powder, and onion powder. Cook until browned on all sides, about 5-7 minutes.
  3. Pour in chicken broth and bring to a boil.
  4. Stir in egg noodles, butter, and Parmesan cheese.
  5. Reduce heat to low, cover, and simmer for 10-12 minutes, or until noodles are tender and most of the liquid has been absorbed, stirring occasionally.
  6. Stir in fresh parsley before serving.

Notes

  • For a richer flavor, use chicken thighs instead of breasts.
  • If you prefer a saucier dish, add an extra 1/2 cup of chicken broth.
  • Add a handful of frozen peas or spinach in the last 5 minutes of cooking for extra vegetables.
