Description

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1.5 lbs Yukon gold potatoes, cut into 1-inch pieces
  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss together the chicken, potatoes, bell pepper, onion, and garlic.
  3. Drizzle with olive oil and sprinkle with oregano, thyme, salt, and pepper. Toss to combine.
  4. Spread the mixture in a single layer on a large baking sheet.
