Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1.5 lbs Yukon gold potatoes, cut into 1-inch pieces
- 1 red bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss together the chicken, potatoes, bell pepper, onion, and garlic.
- Drizzle with olive oil and sprinkle with oregano, thyme, salt, and pepper. Toss to combine.
- Spread the mixture in a single layer on a large baking sheet.
- Bake for 30-35 minutes, or until the chicken is cooked through and the potatoes are tender.
- Serve immediately.
Notes
- For crispier potatoes, broil for the last few minutes of cooking.
- You can substitute other vegetables, like carrots or broccoli.
