Description

This One Pan Balsamic Chicken recipe is a simple and flavorful meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 pound small red potatoes, quartered
  • 1 pint cherry tomatoes, halved
  • 1 red onion, sliced
  • 4 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss potatoes, tomatoes, red onion, and garlic with olive oil, Italian herbs, salt, and pepper.
  3. Arrange vegetables in a single layer on a large baking sheet.
  4. Place chicken breasts on top of the vegetables.
  5. Drizzle chicken with balsamic vinegar and season with salt and pepper.
  6. Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
  7. Let rest for 5 minutes before serving.
