Ingredients

  • 1 cup cooked quinoa
  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Kalamata olives, halved
  • 1/4 cup red onion, thinly sliced
  • 2 grilled chicken breasts, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste


Instructions

  1. Cook quinoa according to package instructions. Let cool.
  2. In a large bowl, combine quinoa, cucumber, cherry tomatoes, feta cheese, olives, and red onion.
  3. In a separate small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. Divide the quinoa mixture evenly among meal prep containers.
  5. Top each container with sliced grilled chicken.
  6. Drizzle the dressing over each salad just before serving or pack it separately.
  7. Seal the containers and store in the refrigerator for up to 4 days.
