Ingredients

  • 1 cup cooked quinoa
  • 1 pound cooked chicken breast, diced
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1/4 cup chopped cilantro
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste


Instructions

  1. Cook quinoa according to package directions.
  2. In a large bowl, combine cooked quinoa, diced chicken, black beans, corn, red bell pepper, red onion, and cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, chili powder, cumin, salt, and pepper.
  4. Pour dressing over the quinoa and chicken mixture. Toss to combine.
  5. Divide into meal prep containers and store in the refrigerator.
