Ingredients
- 1 cup cooked quinoa
- 1 pound cooked chicken breast, diced
- 1 cup black beans, rinsed and drained
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1/4 cup chopped cilantro
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
- Cook quinoa according to package directions.
- In a large bowl, combine cooked quinoa, diced chicken, black beans, corn, red bell pepper, red onion, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, chili powder, cumin, salt, and pepper.
- Pour dressing over the quinoa and chicken mixture. Toss to combine.
- Divide into meal prep containers and store in the refrigerator.

- You can add avocado for extra healthy fats.
