Description

This Mexican Beef Enchilada Casserole is a simple, crowd-pleasing dish. It’s perfect for family dinners or feeding a large group.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 (15 ounce) can tomato sauce
  • 1 (10 ounce) can diced tomatoes and green chiles, undrained
  • 1 packet taco seasoning
  • 12 corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 (28 ounce) can enchilada sauce


Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Brown ground beef in a large skillet over medium heat. Drain excess grease.
  3. Stir in onion and green bell pepper and cook until softened, about 5 minutes.
  4. Mix in tomato sauce, diced tomatoes and green chiles, and taco seasoning. Simmer for 10 minutes.
  5. Cut tortillas into quarters.
  6. Spread a thin layer of enchilada sauce in the bottom of a 9×13 inch baking dish.
  7. Layer tortillas, beef mixture, and cheese in the dish. Repeat layers.
  8. Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
  9. Bake for 20-25 minutes, or until heated through and cheese is melted and bubbly.
  10. Let stand for 10 minutes before serving.

Notes

  • You can substitute ground turkey or chicken for ground beef.
  • Add black olives, sour cream, or guacamole as toppings.
  • Adjust the amount of taco seasoning to your preference.
