Description
This Mexican Beef Enchilada Casserole is a simple, crowd-pleasing dish. It’s perfect for family dinners or feeding a large group.
Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 (15 ounce) can tomato sauce
- 1 (10 ounce) can diced tomatoes and green chiles, undrained
- 1 packet taco seasoning
- 12 corn tortillas
- 2 cups shredded cheddar cheese
- 1 (28 ounce) can enchilada sauce
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Brown ground beef in a large skillet over medium heat. Drain excess grease.
- Stir in onion and green bell pepper and cook until softened, about 5 minutes.
- Mix in tomato sauce, diced tomatoes and green chiles, and taco seasoning. Simmer for 10 minutes.
- Cut tortillas into quarters.
- Spread a thin layer of enchilada sauce in the bottom of a 9×13 inch baking dish.
- Layer tortillas, beef mixture, and cheese in the dish. Repeat layers.
- Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
- Bake for 20-25 minutes, or until heated through and cheese is melted and bubbly.
- Let stand for 10 minutes before serving.
Notes
- You can substitute ground turkey or chicken for ground beef.
- Add black olives, sour cream, or guacamole as toppings.
- Adjust the amount of taco seasoning to your preference.
