Description

Ingredients

  • 1.5 lbs Sirloin Steak, cut into cubes
  • 1 tbsp Olive Oil
  • 1 tsp Garlic Powder
  • 1 tsp Dried Oregano
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 cup Cooked Quinoa
  • 1 cup Cherry Tomatoes, halved
  • 1 cup Cucumber, diced
  • 1/2 cup Red Onion, thinly sliced
  • 1/2 cup Kalamata Olives, halved
  • 1/2 cup Feta Cheese, crumbled
  • 1/4 cup Lemon Vinaigrette


Instructions

  1. Marinate steak cubes with olive oil, garlic powder, oregano, salt, and pepper for at least 30 minutes.
  2. Heat a skillet over medium-high heat and cook steak until browned and cooked to your desired doneness.
  3. Divide cooked quinoa evenly among meal prep containers.
  4. Top quinoa with cooked steak, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.
  5. Drizzle each bowl with lemon vinaigrette.
  6. Store in the refrigerator for up to 4 days.
