Description

Enjoy these quick and easy Mediterranean Spinach Feta Quesadillas for a simple lunch or dinner.


Ingredients

  • 2 large flour tortillas
  • 1 cup fresh spinach
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons sun-dried tomatoes, oil-packed, drained
  • 1 tablespoon Kalamata olives, pitted and sliced
  • 1 tablespoon olive oil


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Place one tortilla in the skillet.
  3. Top with spinach, feta cheese, sun-dried tomatoes, and olives.
  4. Place the second tortilla on top.
  5. Cook for 3-4 minutes per side, or until golden brown and the cheese is melted.
  6. Remove from skillet and cut into wedges. Serve immediately.
