Ingredients
- 2 large flour tortillas
- 1 cup fresh spinach
- 1/4 cup crumbled feta cheese
- 2 tablespoons sun-dried tomatoes, oil-packed, drained
- 1 tablespoon Kalamata olives, pitted and sliced
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large skillet over medium heat.
- Place one tortilla in the skillet.
- Top with spinach, feta cheese, sun-dried tomatoes, and olives.
- Place the second tortilla on top.
- Cook for 3-4 minutes per side, or until golden brown and the cheese is melted.
- Remove from skillet and cut into wedges. Serve immediately.
Notes
- Adjust the amount of feta cheese and sun-dried tomatoes to your liking.
- For a crispier quesadilla, use a cast-iron skillet.
- Serve with a side of tzatziki sauce or hummus.
