Description

Enjoy this Mediterranean Salmon Bowl for a healthy and delicious meal. It’s perfect for clean eating and packed with protein.


Ingredients

  • 4 Salmon fillets
  • 1 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1 cup Cooked quinoa
  • 1 cup Cherry tomatoes, halved
  • 1/2 cup Cucumber, diced
  • 1/4 cup Red onion, thinly sliced
  • 1/2 cup Kalamata olives, halved
  • 1/4 cup Feta cheese, crumbled
  • 2 tbsp Lemon juice
  • 1 tbsp Fresh parsley, chopped


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place salmon fillets on a baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. Bake for 12-15 minutes, or until salmon is cooked through.
  4. In a bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, and Kalamata olives.
  5. Flake the baked salmon and add it to the bowl.
  6. Sprinkle with feta cheese and fresh parsley.
  7. Drizzle with lemon juice and serve.
