Ingredients
- 4 Salmon fillets
- 1 tbsp Olive oil
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 1 cup Cooked quinoa
- 1 cup Cherry tomatoes, halved
- 1/2 cup Cucumber, diced
- 1/4 cup Red onion, thinly sliced
- 1/2 cup Kalamata olives, halved
- 1/4 cup Feta cheese, crumbled
- 2 tbsp Lemon juice
- 1 tbsp Fresh parsley, chopped
Instructions
- Preheat oven to 400°F (200°C).
- Place salmon fillets on a baking sheet. Drizzle with olive oil and season with salt and pepper.
- Bake for 12-15 minutes, or until salmon is cooked through.
- In a bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, and Kalamata olives.
- Flake the baked salmon and add it to the bowl.
- Sprinkle with feta cheese and fresh parsley.
- Drizzle with lemon juice and serve.

- You can use other grains like brown rice or couscous.
