Description

A simple and flavorful one-pot Mediterranean dish featuring tender chicken, orzo pasta, briny olives, juicy tomatoes, and salty feta cheese.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup chopped fresh parsley
  • 1/4 cup crumbled feta cheese
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large skillet or pot over medium-high heat.
  2. Add chicken and cook until browned on all sides.
  3. Stir in orzo, chicken broth, and diced tomatoes. Bring to a boil.
  4. Reduce heat, cover, and simmer for 10-12 minutes, or until orzo is tender and most of the liquid is absorbed.
  5. Stir in olives and parsley.
  6. Season with salt and pepper.
  7. Top with feta cheese before serving.

Notes

  • For a vegetarian option, omit the chicken and use vegetable broth.
  • Add other Mediterranean vegetables like zucchini or bell peppers.
