Ingredients
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup chopped fresh parsley
- 1/4 cup crumbled feta cheese
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet or pot over medium-high heat.
- Add chicken and cook until browned on all sides.
- Stir in orzo, chicken broth, and diced tomatoes. Bring to a boil.
- Reduce heat, cover, and simmer for 10-12 minutes, or until orzo is tender and most of the liquid is absorbed.
- Stir in olives and parsley.
- Season with salt and pepper.
- Top with feta cheese before serving.
Notes
- For a vegetarian option, omit the chicken and use vegetable broth.
- Add other Mediterranean vegetables like zucchini or bell peppers.
