Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 lemon, juiced and zested
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 cup fresh dill, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup Kalamata olives, halved
- 1/4 cup feta cheese, crumbled
- 2 tablespoons hummus per bowl
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, combine lemon juice, lemon zest, olive oil, garlic, dill, salt, and pepper.
- Place chicken breasts in a baking dish and pour the lemon dill mixture over them, ensuring they are evenly coated.
- Bake for 20-25 minutes, or until chicken is cooked through. Let cool slightly and then dice.
- Divide cooked quinoa among bowls.
- Top with diced chicken, cherry tomatoes, cucumber, Kalamata olives, and feta cheese.
- Add a dollop of hummus to each bowl.
- Serve immediately.
