Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup fresh dill, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup Kalamata olives, halved
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons hummus per bowl


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine lemon juice, lemon zest, olive oil, garlic, dill, salt, and pepper.
  3. Place chicken breasts in a baking dish and pour the lemon dill mixture over them, ensuring they are evenly coated.
  4. Bake for 20-25 minutes, or until chicken is cooked through. Let cool slightly and then dice.
  5. Divide cooked quinoa among bowls.
  6. Top with diced chicken, cherry tomatoes, cucumber, Kalamata olives, and feta cheese.
  7. Add a dollop of hummus to each bowl.
  8. Serve immediately.
