Description

Ingredients

  • 1 lb Ground Beef
  • 1 tbsp Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tsp Dried Oregano
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 cup Cooked Quinoa
  • 1 cup Cherry Tomatoes, halved
  • 1/2 cup Cucumber, diced
  • 1/4 cup Kalamata Olives, halved
  • 1/4 cup Feta Cheese, crumbled
  • 2 tbsp Hummus


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground beef and cook, breaking it apart with a spoon, until browned.
  3. Drain any excess grease from the skillet.
  4. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  5. Stir in oregano, salt, and pepper.
  6. Divide cooked quinoa between bowls.
  7. Top with ground beef mixture, cherry tomatoes, cucumber, olives, and feta cheese.
  8. Drizzle with hummus and serve immediately.
