Ingredients
- 1 lb Ground Beef
- 1 tbsp Olive Oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 tsp Dried Oregano
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 1 cup Cooked Quinoa
- 1 cup Cherry Tomatoes, halved
- 1/2 cup Cucumber, diced
- 1/4 cup Kalamata Olives, halved
- 1/4 cup Feta Cheese, crumbled
- 2 tbsp Hummus
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground beef and cook, breaking it apart with a spoon, until browned.
- Drain any excess grease from the skillet.
- Add onion and garlic to the skillet and cook until softened, about 5 minutes.
- Stir in oregano, salt, and pepper.
- Divide cooked quinoa between bowls.
- Top with ground beef mixture, cherry tomatoes, cucumber, olives, and feta cheese.
- Drizzle with hummus and serve immediately.
