Ingredients

  • 1 lb Chicken Breast, cut into cubes
  • 1 Red Bell Pepper, chopped
  • 1 Yellow Bell Pepper, chopped
  • 1 Zucchini, chopped
  • 1 Red Onion, chopped
  • 1 cup Cherry Tomatoes, halved
  • 1/2 cup Kalamata Olives, halved
  • 1/4 cup Feta Cheese, crumbled
  • 3 tbsp Olive Oil
  • 2 tbsp Lemon Juice
  • 1 tbsp Dried Oregano
  • 1 tsp Garlic Powder
  • Salt and Pepper to taste


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine chicken, bell peppers, zucchini, red onion, cherry tomatoes, and olives.
  3. Drizzle with olive oil and lemon juice. Season with oregano, garlic powder, salt, and pepper. Toss to coat.
  4. Spread mixture evenly on a baking sheet.
  5. Bake for 20-25 minutes, or until chicken is cooked through and vegetables are tender.
  6. Remove from oven and sprinkle with feta cheese.
  7. Serve immediately.
