Ingredients
- 1 lb Chicken Breast, cut into cubes
- 1 Red Bell Pepper, chopped
- 1 Yellow Bell Pepper, chopped
- 1 Zucchini, chopped
- 1 Red Onion, chopped
- 1 cup Cherry Tomatoes, halved
- 1/2 cup Kalamata Olives, halved
- 1/4 cup Feta Cheese, crumbled
- 3 tbsp Olive Oil
- 2 tbsp Lemon Juice
- 1 tbsp Dried Oregano
- 1 tsp Garlic Powder
- Salt and Pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine chicken, bell peppers, zucchini, red onion, cherry tomatoes, and olives.
- Drizzle with olive oil and lemon juice. Season with oregano, garlic powder, salt, and pepper. Toss to coat.
- Spread mixture evenly on a baking sheet.
- Bake for 20-25 minutes, or until chicken is cooked through and vegetables are tender.
- Remove from oven and sprinkle with feta cheese.
- Serve immediately.
