Ingredients
- 1 lb Chicken Breast, cubed

- 1 cup Cooked Quinoa
- 1 cup Cherry Tomatoes, halved
- 1/2 cup Cucumber, diced
- 1/2 cup Kalamata Olives, halved
- 1/4 cup Red Onion, thinly sliced
- 1/4 cup Feta Cheese, crumbled
- 2 tbsp Lemon Vinaigrette
Instructions
- Season chicken with olive oil, oregano, salt, and pepper.
- Cook chicken in a skillet over medium heat until cooked through.
- Assemble bowls with quinoa, tomatoes, cucumber, olives, and red onion.
