Ingredients

  • 1 lb Chicken Breast, cubed
  • 1 tbsp Olive Oil
  • 1 tsp Dried Oregano
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 cup Cooked Quinoa
  • 1 cup Cherry Tomatoes, halved
  • 1/2 cup Cucumber, diced
  • 1/2 cup Kalamata Olives, halved
  • 1/4 cup Red Onion, thinly sliced
  • 1/4 cup Feta Cheese, crumbled
  • 2 tbsp Lemon Vinaigrette


Instructions

  1. Season chicken with olive oil, oregano, salt, and pepper.
  2. Cook chicken in a skillet over medium heat until cooked through.
  3. Assemble bowls with quinoa, tomatoes, cucumber, olives, and red onion.
  4. Top with cooked chicken and feta cheese.
