Description

A flavorful Masala Desi Pasta recipe with an Indian twist. It combines traditional pasta with aromatic spices and tender chicken for a delicious and satisfying meal.


Ingredients

  • 1 pound pasta
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 green chili, chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup heavy cream
  • Salt to taste
  • Fresh cilantro, chopped, for garnish


Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
  3. Add onion to the skillet and cook until softened, about 5 minutes. Add garlic, ginger, and green chili and cook for 1 minute more.
  4. Stir in turmeric powder, red chili powder, coriander powder, cumin powder, and garam masala. Cook for 1 minute, stirring constantly.
  5. Add diced tomatoes and bring to a simmer. Cook for 10 minutes, stirring occasionally.
  6. Stir in heavy cream and salt. Return chicken to the skillet and heat through.
  7. Add cooked pasta to the skillet and toss to coat.
  8. Garnish with fresh cilantro and serve immediately.

Notes

  • Adjust the amount of chili powder to your preferred level of spiciness.
  • You can substitute chicken breast for chicken thighs.
  • For a vegetarian option, omit the chicken and add vegetables like bell peppers, mushrooms, and peas.
