A flavorful Masala Desi Pasta recipe with an Indian twist. It combines traditional pasta with aromatic spices and tender chicken for a delicious and satisfying meal.
Ingredients
- 1 pound pasta
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 green chili, chopped
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1/2 teaspoon garam masala
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1/2 cup heavy cream
- Salt to taste
- Fresh cilantro, chopped, for garnish
Instructions
- Cook pasta according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
- Add onion to the skillet and cook until softened, about 5 minutes. Add garlic, ginger, and green chili and cook for 1 minute more.
- Stir in turmeric powder, red chili powder, coriander powder, cumin powder, and garam masala. Cook for 1 minute, stirring constantly.
- Add diced tomatoes and bring to a simmer. Cook for 10 minutes, stirring occasionally.
- Stir in heavy cream and salt. Return chicken to the skillet and heat through.
- Add cooked pasta to the skillet and toss to coat.
- Garnish with fresh cilantro and serve immediately.
Notes
- Adjust the amount of chili powder to your preferred level of spiciness.
- You can substitute chicken breast for chicken thighs.
- For a vegetarian option, omit the chicken and add vegetables like bell peppers, mushrooms, and peas.
