Description

A simple and delicious sheet pan meal featuring tender chicken glazed with maple syrup, roasted alongside seasonal root vegetables.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 2 medium carrots, peeled and chopped
  • 2 medium parsnips, peeled and chopped
  • 3 tablespoons maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the chopped carrots and parsnips with 1 tablespoon of olive oil, salt, pepper, and thyme on a large baking sheet.
  3. Arrange the chicken thighs on the same baking sheet.
  4. In a small bowl, whisk together the maple syrup and the remaining 1 tablespoon of olive oil.
  5. Pour the maple syrup mixture over the chicken and vegetables, ensuring everything is lightly coated.
  6. Roast for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender and slightly caramelized.
