Ingredients

  • 1 pound salmon fillet, skin on or off
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • 1 cup cooked rice
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place salmon on a baking sheet. Drizzle with olive oil, salt, and pepper.
  3. Bake for 12-15 minutes, or until salmon is cooked through.
  4. In a bowl, combine mango, red onion, cilantro, and lime juice. This is your mango salsa.
