Ingredients
- 1 pound salmon fillet, skin on or off
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 1 tablespoon olive oil
- 1 cup cooked rice
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Place salmon on a baking sheet. Drizzle with olive oil, salt, and pepper.
- Bake for 12-15 minutes, or until salmon is cooked through.
- In a bowl, combine mango, red onion, cilantro, and lime juice. This is your mango salsa.
- Serve salmon over rice, topped with mango salsa.
