Description

Enjoy this Low Carb Chicken Broccoli Casserole. It is a simple and satisfying meal.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cooked and shredded
  • 1 large head of broccoli, cut into florets and steamed
  • 1 cup heavy cream
  • 4 oz cream cheese, softened
  • 1 cup cheddar cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine shredded chicken, steamed broccoli, heavy cream, softened cream cheese, half of the cheddar cheese, Parmesan cheese, minced garlic, salt, and pepper.
  3. Mix well until all ingredients are fully combined.
  4. Pour the mixture into a greased 9×13 inch baking dish.
  5. Sprinkle the remaining cheddar cheese over the top.
  6. Bake for 20-25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
  7. Let stand for a few minutes before serving.

Notes

  • For extra flavor, add a pinch of red pepper flakes.
  • You can substitute cauliflower for broccoli.
  • Store leftovers in the refrigerator for up to 3 days.
