Ingredients
- 2 large russet potatoes, baked and cubed
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup cooked black beans
- 1 cup corn
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 2 tablespoons chopped green onions
Instructions
- Bake potatoes until soft. Cube them.
- Heat olive oil in a large skillet over medium heat. Add onion and bell pepper. Cook until softened.
- Stir in chili powder, cumin, garlic powder, salt, and pepper.
- Add cubed potatoes, black beans, and corn to the skillet. Heat through.
- Divide mixture into bowls. Top with cheese, sour cream, and green onions.
Notes
- For a spicier bowl, add a pinch of cayenne pepper.
- You can use sweet potatoes instead of russet potatoes.
- Add your favorite taco toppings, such as salsa or guacamole.
