Description

Enjoy a flavorful Loaded Potato Taco Bowl. It combines the comfort of loaded potatoes with the fun of tacos.


Ingredients

  • 2 large russet potatoes, baked and cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cooked black beans
  • 1 cup corn
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 2 tablespoons chopped green onions


Instructions

  1. Bake potatoes until soft. Cube them.
  2. Heat olive oil in a large skillet over medium heat. Add onion and bell pepper. Cook until softened.
  3. Stir in chili powder, cumin, garlic powder, salt, and pepper.
  4. Add cubed potatoes, black beans, and corn to the skillet. Heat through.
  5. Divide mixture into bowls. Top with cheese, sour cream, and green onions.

Notes

  • For a spicier bowl, add a pinch of cayenne pepper.
