Ingredients
- 1 pound pasta
- 15 ounces ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon lemon zest
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Cook pasta according to package directions. Reserve 1 cup of pasta water before draining.
- In a large bowl, combine ricotta cheese, Parmesan cheese, lemon juice, olive oil, garlic, and lemon zest.
- Add cooked pasta to the bowl with the ricotta mixture. Toss to coat.
- Add pasta water, a little at a time, until desired consistency is reached.
- Season with salt and pepper.
- Garnish with fresh basil leaves. Serve immediately.

- Adjust lemon juice to your taste.

- Use whole milk ricotta for a richer sauce.
