Ingredients

  • 1 pound pasta
  • 15 ounces ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • Fresh basil leaves for garnish


Instructions

  1. Cook pasta according to package directions. Reserve 1 cup of pasta water before draining.
  2. In a large bowl, combine ricotta cheese, Parmesan cheese, lemon juice, olive oil, garlic, and lemon zest.
  3. Add cooked pasta to the bowl with the ricotta mixture. Toss to coat.
  4. Add pasta water, a little at a time, until desired consistency is reached.
  5. Season with salt and pepper.
  6. Garnish with fresh basil leaves. Serve immediately.
