Ingredients
- 1 1/2 cups all-purpose flour

- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup buttermilk
- 1/4 cup vegetable oil
- 1/4 cup lemon juice
- 2 tbsp lemon zest
- 2 tbsp poppy seeds
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In a separate bowl, cream together sugar and butter until light and fluffy.
- Beat in eggs one at a time, then stir in buttermilk, oil, lemon juice, and lemon zest.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in poppy seeds.
- Fill cupcake liners about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
