Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tbsp olive oil
- 2 lemons, zested and juiced
- 2 tbsp lemon pepper seasoning
- 1 tsp garlic powder
- 1 lb mixed vegetables (broccoli, carrots, bell peppers), chopped
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, toss mixed vegetables with olive oil, salt, and pepper. Spread on a baking sheet.
- In a separate bowl, combine chicken, olive oil, lemon zest, lemon juice, lemon pepper seasoning, and garlic powder.
- Spread chicken in a single layer on a separate baking sheet.
- Roast vegetables for 20 minutes. Add chicken to the oven and roast both for another 15-20 minutes, or until chicken is cooked through and vegetables are tender.
- Serve immediately.
